Delicious Arborio rice cakes. Perfect for a meal or accompaniment, snacks and lunchboxes. Contains a sachet of ‘real’ Tuscan-style vegetables (not dehydrated). A mild flavour to suit children and those who prefer less spice. The cakes can be made into 12 muffin or 48 mini-muffin sized portions. Great to freeze and reheat or defrost to eat in lunchboxes. Only need to add eggs and cheese.

Handy Hints
Grease muffin tins well to avoid the cakes sticking.
Cook the cakes at a higher heat than specified to create a crispy bottom to make it easy to get the cakes out of the tins. e.g. 230 degrees for 10 mins.
Add the ingredients in order specified to ensure success.
To get 80 mini-mini cakes use mini muffin tins and use 1 teaspoon of mix for each cake. Cook at 230 degrees for 10 mins.
Creative variations
Top with lashings of Philly cream cheese, prosciutto or gluten free bacon, or olives.
Add romano cheese for a bitey flavour burst, or sundried tomatoes for an extra taste kick, or bacon or mushrooms for a flavour variation.
Add chicken to the risotto mix for a family dinner.
Make the risotto cakes in paper muffin tray liners, easier to freeze for lunch, picnics or snacks.
