Cantonese Style Fried Rice

 

The rice can be cooked the day before and cooled. Store it covered in the refrigerator.

  • 2 ½ cups short grain white rice
  • 1/3 cup oil
  • 4 rashes bacon, cut in 1cm wide strips
  • 1 small red capsicum, diced
  • 1 cup frozen green peas, rinsed with hot water
  • 3 shallots, finely chopped
  • 3 eggs, lightly beaten
  • 200g small peeled cooked prawns
  • 2 tablespoons Changs Light Soy Sauce

 

Put rice and 3 cups cold water in a heavy based saucepan, cover and bring to the boil. When tunnels form over the top of the rice, reduce heat to very low and cook for 12 minutes, use fork to fluff rice. Turn out onto a tray to cool.

 

Heat the wok or large heavy based pan until very hot, add half the oil. Add the bacon and capsicum and stir-fry for 2 minutes or until bacon is golden. Remove and set aside.

 

Reheat wok, add a little of the oil. Pour in the egg and turn the pan to spread the egg widely over the base of the wok. Cook until firm underneath, then break up with a spatula and remove. Wipe out the wok with a piece of paper towel.

 

Reheat wok. Add remaining oil to hot wok, add the rice and stir-fry for 2 minutes. Return the bacon and capsicum with the peas, shallots and prawns and the soy sauce. Continue stirring for a few minutes more, stir in egg. Serve immediately.

 

How to cook Chinese Greens

 

Bok choy, choy sum and gai laan are all types of Chinese greens. Bok choy has fleshy white stems it cooks very quickly when stir-fried. Choy sum has dark green leaves and with yellow flowers, it is also called flowering cabbage. Gai Laan is also call Chinese broccoli it has smooth dark green stalks and dark green leaves.

Cook all of them in the same way, trim and then rinse the greens in cold water, leave a little water clinging to the leaves. Heat a wok until very hot, add oil, heat oil add the greens and cook stirring for 2 to 4 minutes, add a little water if needed as it cooks. In the last few minutes of the cooking time add a couple of spoons of Changs Oyster sauce. Sliced garlic cloves and shredded ginger can also be cooked with the greens.
