Gluten Free Cheesecake

Ingredients

  • 2 eggs
  • 450gm of cream cheese
  • ½ cup of white sugar
  • 1 tsp of vanilla extract
  • 1 cup of full fat sour cream

 

Method

  • Pre heat the oven to 180°C
  • Mix the eggs, cream cheese (best if room temperature), sugar and vanilla extract in a mixer.
  • Scrape into a medium pie pan (about 20cm)
  • Bake for about 40 minutes, or until the top has set
  • Straight away, while it is still hot, spread on the full fat regular sour  
  • Cool and eat, or refrigerate and eat

 

Can be topped with fresh fruit or whipped cream
